Sugar Cookie Fruit Pizza

My mom used to make this fruit pizza situation when I was a kid. I remember it only happening in summer, only for special occasions, and being extremely excited every time it happened.

The other day we had a family birthday, and I wanted to bring the pizza cookie from my memory, but didn’t know how to transport such a large dessert (mostly because we have a small car, two car seats, a german shepherd, and two above average height adults packed into the car at this point).

So let’s shrink them down to cookies!

You’ll need…

  • your favorite sugar cookie recipe (I used this gluten free one because of dietary restrictions in our family).
  • One 8oz package of cream cheese
  • 1/4 to 1/2 C powdered sugar
  • 1/4 t vanilla extract
  • assorted fruits, washed and cut (I went with blueberries, strawberries and kiwi)

Bake the cookies according to your recipe’s instructions. Let them cool completely.

In an electric mixer, combine the cream cheese, powdered sugar, and vanilla and mix until smooth.

When the cookies are cool, top them with a smear of frosting and let your kids help you decorate with the fruit. Enjoy!
