How do you get your toddlers to gobble down three or four carrots in one sitting? I’ve got the answer for ya.
My mom and I used to make this together when I was growing up. She called it choo choo salad, and upon googling it a few years ago and getting zero results, I promptly realized it was just a fun name my mom came up with to get me to eat a bowl of packed full of beta carotene and vitamin C.
And it worked like a charm.
Fast forward to me having my own two toddler mouths to feed, and that choo choo is still working. Especially when I let them help me make it. Nothing get’s my two babes to eat something like letting them make a mess of it beforehand.
Kid’s Carrot Slaw
4 large carrots
1/4 C freshly squeezed orange juice (about one large orange)
1/2 C raisins
Peel, trim, and shred the carrots (You can use a food processor to really speed things along, or do it by hand. Either one works!). Mix them with the orange juice + raisins and toss to combine.
