Minty Peas

G loves gardening, and he will eat, or at least try, just about anything if it includes something he grew. That got me thinking that I should make a sauce for him using our herbs. I decided on mint, which is refreshing in this heat. I used half a cup of mint, which leads to a very minty dish.  If a lot of mint isn’t your thing, you may want to scale back the amount used. Because both G and C love peas, I  got away with making just one meal with this dish.

I used: 
-1 bag frozen petite peas
-1/2 c fresh mint
-1/2 package of pasta (I used penne)
-1/2 to 3/4 c olive oil
-1/2 tsp salt
-grated Parmesan cheese
Put water on for pasta, and cook pasta to preferred firmness. Steam the peas, remove 1 cup of whole peas, and put the remaining peas into the food processor. Add the mint, the olive oil, and salt and process until smooth, adding more olive oil if necessary. Put the mint and pea mixture into a bowl, and add in reserved peas. Add the sauce to pasta, and top with cheese if desired.
