One of my favorite things about summer is gardening with my kids. I don’t know who is more excited about those little green shoots when they appear in May, and then again when the actual vegetables start showing up mid-summer. I swear both of my little ones eat more vegetables standing in the backyard than they do an entire day in the wintertime.
But sometimes we get really tired of cucumbers, because they grow so well.
So we always scramble to find places for them (besides pickle jars, which is my favorite thing to do with them!). Places like this slushy!
I understand if you’re wary of a vegetable in a slushy. I totally get it. But this cucumber watermelon (+ lime) situation is so refreshing. So summery. You (and your littles) won’t be able to resist!
Watermelon Cucumber Slush
- 2 C diced, frozen watermelon (plus more for garnish)*
- 1 large cucumber, peeled
- 2 limes
- pinch of salt
Blend all ingredients in a blender until smooth. Garnish with frozen watermelon cubes and lime wedges. Then sit back and soak up the rest of summer.
*I just slice up a big watermelon and freeze 2 cups of it. It only takes a couple of hours to freeze completely.
