My kids love dairy.
Milk, yogurt, cheese, ice cream, butter (oh, the love for butter!), more cheese, more milk. So much dairy love. So, when I’m wanting them to try new things (like microgreens!) I always start out by putting things with a little dairy. You know, ease them into it.
It’s not hiding it per say (I mean, the greens are right there on top), just making them comfortable while introducing something new. I figure, if they see and try lots of green things when they’re little, they’ll be no need to hide or disguise it later on. Right?
So, this white salad is a variation of something I got out of a cookbook my mom used to use a lot.
Take a cup of cottage cheese and add…
half a chopped up apple
1 tablespoon of chia seeds
2 tablespoons of raisins
a squeeze of lemon
a squeeze of honey
a handful of microgreens (I used a mix of kale, kohlrabi, and broccoli)
Stir all together and serve! Hope you all enjoy this as much as we did!
